Tropical Tacos

It's here folks....the weekly taco!! This week I am whipping up some coconut shrimp tacos with the most amazing mango salsa and sweet chili sauce. You guys, I need 5 more. It should be illegal to have to eat all of this by myself.


These tacos are SO easy. Literally, you don't even make the shrimp from scratch (sorry not sorry). Sometimes we need a quick meal when we have 8 million other things to do in life. Life is all about balance. Balance that job, your sanity, social life, & be a badass in the kitchen at the same time. You go glen co-co.



This blog post will be short, like i said, way too easy.


Trader Joes rocks my world. Anyone else? Seriously when was the last time you had something bad from there? Never.

I had a rough day at work today so I just wanted to keep taco tuesday simple. Pop these babies in the oven at 450 and start making your salsa!


1 salsa, 4 ingredients.

Mangos (defrosting because who has time to find ripe mangos in AZ......I never win)

Tomatoes

Hatch Green Chiles (RUN to the store, they are in season)

Onion....never live without onion.


My mangos are defrosted and super easy to chop up now.


***Pro-Tip*** after you chop everything up, don't touch your eyes.....the hatch green chiles......my eyes.....help.


Why am I so graceful?



Shocker, using avocado oil again for my tortillas!


Make sure your tortillas get nice and crispy!


One of the most important ingredients. The sweet chili sauce. Oh sweet heat, how i love you. This helped make the taco. Without it, it would have been bland. I might have to wander back to the kitchen and get more......


That's it! Super simple. Assemble your tacos after you bake your shrimpys! Shrimp, salsa, sauce....mmmmm.
