Spinach Artichoke Crockpot

If you don't follow me on my Instagram, I shared this delicious crock pot meal with you all not too long ago. I figured I should probably update ya'll on here just in case you are not Insta-friendly.

I was supposed to have my sh*t together about 5 years ago and I am still working on it.
To actually talk about the dish though, this is keto friendly/low carb meal. If you love spinach artichoke dip, you will love this rich, full flavored, spinach artichoke/chicken crock pot meal. Say that 9 times.

So just like the photo above I'll break it down a bit more for ya.

I cubed my chicken and put it in the crock pot for 2 hours on high. You can choose to do 4 hours on low if you prefer that as well. Make sure you season as well.
Right before the chicken is about done, I put my frozen spinach in a strainer and I drained/rinsed it under cold water.
You will add the spinach along with the artichoke hearts, cream cheese & cheeses. Cook for another hour on high or 2 hours on low.





This is what it will look like when it is done. Doesn't really look appetizing but hey sometimes the best tasting food doesn't look the most appealing!
Did I mention food is meant for just eating it...so enjoy it!
