Monday Night Tacos

Here in Arizona, everyone is pretty religious about Taco Tuesday...but that is everyone else, I'm trying to break barriers here! This super easy Monday night taco recipe is perfect (and quick) for all your Monday blues. Break out your jammies, put on a sombrero, grab yourself a margarita, & throw those work shoes in the closet....¡Arriba, arriba!



No matter what you have going on, I promise you'll have time for this one. This past weekend I was in Costco and I saw these already cooked pork carnitas. I thought to myself "Not only do I get pre-cooked deliciousness, but it comes in two packs and you know what that means (psssst...2 TACO NIGHTS)".





First things first, the coleslaw. Now some of you probably are thinking that coleslaw is for barbeque or for sandwiches, but you'll want to dismiss those negative thoughts...who has time for that? I swear by taco coleslaw that this will elevate your taco game. I have proven this with several non coleslaw on taco believers.


You'll want to make this first because the slaw gets the most flavor while sitting in the fridge during your cooking time. Its literally the easiest thing in the world to make.


Depending on how many people I am cooking for, I eyeball the amount of sour cream. For just the two of us in my household, I use one heaping spoonful (sorry guys, the best food is cooked with love not measurements ;) ) In addition, I add about 1/4 to 1/2 packet of taco seasoning. You can also add some white pepper or some more garlic powder for more flavor.


Once I mix the seasoning and the sour cream, I add the coleslaw. Make sure its evenly covered, but not smothered if that makes sense?


Pro Tip: ALWAYS add cilantro. **pours cilantro all over life**

Stick that baby in the fridge and move on to the meat and veggie prep!


We all know how to chop veggies right? I don't want to put you to sleep here! If you don't know how to chop veggies....who cares, just start chopping in different directions until the food is small...I know great advice.


After you're done chopping up the veggies you will want to eat up that delicious pork carnitas in a large saute pan. Don't forget the butter, you can never have enough butter.


We have hard water here in Arizona, don't judge me!

I like to add some seasoning even though it is already seasoned. Adds an extra kick.


Who else bathes in garlic? LOL but really, it's life in a jar/container.

Once your carnitas are warm and toasty, all there is left to do is warm up your tortillas, top it with your pepper/onion mix & coleslaw, & voila!


Sometimes I like to be extra fancy, and put my tacos in cute little holders. I got them on Amazon for a steal. See here!





I know you must be all thinking, "Skye, I can't have pork tacos every week...give me more!". Trust me, I am constantly dreaming of tacos, it's one of the benefits of adulting. More taco recipes coming...stay tuned!
