Lemon Garlic Chicken

Anyone else come up with random meals when there is nothing in your kitchen to cook? I sometimes find my best meals that way! This was one of them. I didn't want to make just a basic chicken breast and veggies. I wanted it to have way more flavor than that!


You'd think that if anyone has food ideas, it's me. Wrong! I wish picking out what to eat was easier lol!




But this dish is super simple. Chicken with a lemon/garlic cream sauce. Then I added in some asparagus to get your greens in. Boom, bon appetit.


All you need is:

1 Lemon

Chicken Breasts

1/4 cup of heavy whipping cream

1 cup of chicken broth

2 tablespoons of butter

Minced garlic + chopped shallots (red onion will do)

Olive oil

Salt, Pepper & any other preferred seasonings. Stick with italian flavored seasonings or the generics.



Cook your chicken breasts in your olive oil and in salt/pepper.


To the side, in a sauce pan, combine your cream sauce ingredients besides the heavy whipping cream.


This includes: Half your lemon, 1 cup of chicken broth, half of a full shallot, and I used 3 cloves of garlic.



You are literally only combining these to keep them on warm while you finish your chicken breasts.


I know it seems pointless but there is a method to my madness!


Ok, so when your chicken breasts are done, set them aside like so.


Now here is where the sauce will make sense.


In the pan you cooked the chicken, add your sauce contents to that pan and stir up the remnants of the chicken seasoning/flavoring into the sauce.


This adds SO much flavor.

Next add in your 2 tablespoons of butter.



Next add in your heavy whipping cream and continue to stir.


Once the sauce is warm, add your chicken breasts back in to get some extra flavor from the sauce.


After that, I let the chicken cook in that sauce just a tiny bit more and I added in 2 tablespoons of cornstarch to thicken it quickly so I could eat and go to bed lol.



If you're feeling extra, add in some slices of lemon!


& There you have it, a quick, easy, and I'd have to say....quite delicious dinner!

Chicken is so versatile and I love you can cook it any way.
