Jalapeno + Honey Corn Bread Muffins

This year for Christmas Eve, we all had a chili and Christmas pj night! My job was the topping and the cornbread. Lets give the food blogger the easy route out ey? I mean I am not complaining, cooking can be a lot of work sometimes. This was easy peasy! However, I have never made homemade cornbread. I can tell you one thing though, this recipe is here to stay! It was too good! The great thing about cornbread is you can eat it for all different meals. Breakfast, lunch, dinner, dessert.....whatevaaaa!

There won't be much to tell you here because it's a super simple recipe. We can just pretend I was oober descriptive for ya'll....but hopefully the pictures will do.
First you will preheat your oven to 400. While the oven is heating, mix together your dry ingredients. You will then make a well with the dry ingredients to place the wet ingredients.



I put the butter on the stove to brown it. I then let it cool before adding to the batter.

Gently fold in your wet ingredients and your browned butter until everything is combined.
Finally add in your jalapenos. Do not over-mix!

Add to your muffin cups or you can make an 8x8 pan of bread. I didn't keep track of time honestly, I just waited until the tops were golden brown.
As always, serve your corn-bread warm and with fresh local honey and butter. Mmmm.
If you make them as muffins, you can feel a little better about eating them, pro tip ya know.
Just kidding, enjoy your cornbread. You won't be over-weight from indulging once!
