Chicken + Potato Tacos

Ladies and Gents, give a warm round of applause for the potato chicken Taco!! *The crowd goes wild…..wooooo*.
Honestly, I do not know what these are called. Polo de papas? Don’t quote me on that, I retained 56% of my Spanish from school.
Story time! OK, I originally got this idea from one of the girls that took an open position at my old property. She told me her mother has been making tacos authentically like this her whole life and I was just so intrigued on how it would taste. I know, cool story bro. And here I am, making these delicious tacos.
If you don’t like potatoes I am sorry and you don’t even need to waste your time. However these were super filling and delicious I must say.


You don’t need very many ingredients. Just 1 potato, chicken (or meat of choice), your toppings (I chose onion and cilantro), and corn tortillas!

I pictured my seasonings here but as I go I have a bad habit of adding in extra seasonings…

First you are going to put your chicken on a skillet with some oil and get that going.


Next you’ll prepare you potato. Skin the potato and then chop into tiny cubes. Once they are all chopped up, add to a heated skillet and start to brown your papas!

In between all the fun, you’ll want to dice up your onion and cilantro. This duo cannot go wrong on any taco. But like I said, feel free to use whichever combos you prefer.

So for some reason, I have been craving my meat crispy like I BBQ’d it. I cooked my chicken on my stove top until it got nice and crispy as you can see. I promise it is intended.

Once the chicken is done, I chopped it up and put it back into the skillet on low with some grass fed butter to keep it moist.

In the meantime, keep turning your potatoes until they turn into crispy goodness like so (below).

You can also boil your potatoes and then crisp a tiny bit after. You’re going to end up mashing the potatoes anyway when assembling the taco.

Everything should be ready to go now! It’s go time! After warming your tortillas in oil as pictured, assemble your tacos with potatoes first. Make sure you use a fork to mash the potatoes as a base for the taco.

Add in your chicken & finally top it off with your onion/cilantro.


& there you have it, a tasty, super simple, “authentic”, potato taco.
Can you guys tell I am running out of ideas for tacos? I have a bunch of beef options available, but that means I can’t participate in eating my weekly taco. Sad day….
